Ingredients

Method

  1. In a large frying pan, heat 50ml of Mr Organic Extra Virgin Olive Oil over medium heat. Add two whole garlic cloves, allowing them to gently infuse the oil until they turn golden and aromatic. Pour in a tin of Mr Organic Chopped Tomatoes, filling a quarter of the empty tin with water and adding it to the pan. Season generously with salt and pepper, and let it simmer gently, allowing the flavours to deepen.
  2. For the marinated tomato topping, drain the Mr Organic Whole Plum Tomatoes, reserving their juice. Slice the tomatoes into four long segments. Dress them with a drizzle of Mr Organic Olive Oil, fresh basil, finely diced garlic, and a pinch of salt and pepper. Set aside to marinate and absorb the flavours.
  3. Stir the reserved tomato juice into the simmering sauce. Lower the heat to a gentle setting, and pass the sauce through a fine sieve, returning the smooth liquid to the pan. Blend the remaining solids in a food processor or with a stick blender until they form a smooth, rich paste. Fold in half a pot of Superstraccia, mixing until the sauce becomes a thick, velvety cream.
  4. Turn down the heat to the lowest setting and strain the sauce through a sieve, pouring the juice back into the frying pan.
  5. In a large pot, bring 2 litres of salted water to a rolling boil. Cook Mr Organic Spaghetti until al dente, then drain thoroughly. Toss the spaghetti in the creamy tomato sauce, ensuring each strand is well coated.
  6. To serve, plate the spaghetti and garnish with the marinated tomato segments. Finish with generous pieces of Burrella for a final touch of richness.
