Method
- Start by brushing the brioche buns with olive oil and lightly toasting them face down in a pan.
- Thinly slice the tomatoes and set them aside.
- Next caramelise the onions. Heat oil in a pan over low heat, then add onions with a pinch of salt and cook on a low heat for an additional 5-10 minutes, stirring occasionally, until sticky and caramelised.
- Cut the mushrooms into flat pieces, removing the stalks to create ‘patty’-like pieces.
- Grill them in a pan with olive oil and garlic to extract all the juices. Once softened, add a handful of parsley leaves and a dash of cooking wine. Fry until reduced.
- Spread mustard on the bottom brioche bun and begin assembling the burger by adding the tomato, mushrooms, and onions.
- Crown it with a Burrella® half and a generous drizzle of olive oil, then finish with the top brioche bun.
