Ingredients
- Round Zucchini
- Lemon
- Superstraccia
- Extra Virgin Olive Oil
Method
- Slice the zucchini thinly using a mandolin. Toss the slices in extra virgin olive oil and season with salt.
- Roast in a preheated oven at 180°C for 10-15 minutes, or until they are golden and crispy.
- To serve, spread the Superstraccia on the base of your plate, layer the zucchini on top, and finish with a drizzle of olive oil and freshly grated lemon zest.
