Welcome to our series where you show you how to make simple yet impressive dishes when you are hosting. This Upside Down Puff Pastry Potato Tart is the perfect thing to make this weekend.

Ingredients

Method

  1. Start by using a mandolin to thinly slice the potatoes and onions. Drizzle olive oil onto a lined tray and then evenly lay the onions followed by the potato slices side by side.
  2. Next take your puff pastry sheet and place it on of top the tray of potatoes and onions. Poke holes in the pastry with a fork, brush with some oil and bake in the oven for around 15 minutes.
  3. Remove from the oven, place another baking tray on top and carefully flip the tray before pealing back the baking paper to reveal your beautiful creation.
  4. Finish with generous dollops of Superstraccia and basil leaves, extra virgin olive oil and Salt before cutting up into however many guests you have.
  5. Enjoy!
